Students will gain an understanding of the human resource management function in the context of the small business. Emphasis is placed on strategies employed by small business owners to address shifts in workforce demographics, professional expectations, legal requirements, and contemporary workforce issues. Global and regional trends in food consumption and production are surveyed. Trade, technological change, and other responses to food scarcity are analyzed.
